Yuppies Scallop Potatoes
INGREDIENTS
5Annabelle Potatoes (sliced)5
1/4 CupButter50 ml
1Shallots (finely chopped)1
3 ozCream cheese85 g
3 ozDouble Cream Brie85 g
1 tbspSour Cream15 ml

DIRECTIONS
In a frying pan, melt butter, then add the sliced potatoes, and grill till nice and brown, then flip them on the other side and do the same - about 3 to 4 minutes on each side. Add your shallots and cheese(s) - mix in until melted. Finish with the sour cream. Serve with a bit of sliced green onions.
