Twice baked Annabelle Potatoes
INGREDIENTS
2Large Annabelle Potatoes2
1/4 CupGreen Pepper, finely diced75 ml
2 1/2 TbspSour Cream20 ml
to tasteSaltto taste

DIRECTIONS
Wash potatoes and pierce several times. Oven Bake Annabelle potatoes until cooked through (about 40 minutes- depending on the size). Cut in half. Make criss-cross cuts through the flesh to make it easier to scoop. Scoop out the flesh being careful not to break the skin. Mash well and add salt to season. Finely dice green peppers. Add sour cream and green peppers to potatoes and beat mixture until creamy. Scoop mixture back into potato ‘boats’ sprinkle top with bacon bits and bake for an additional 20 minutes.
